What frying oil does Chick-fil-A use?
Much to the satisfaction of millions, Chick-fil-A has used refined peanut oil for decades. According to the Chick-fil-A website, they use “100% refined peanut oil.” They go on to state that “refined soybean and peanut oil are not considered major food allergens.” In fact, refined peanut oil provides a perfect medium for creating crunchy foods at high heat without off flavors.

Still, dining out is an important part of normal experiences for everyone. Those with a peanut allergy may wonder how cooking with peanut oil impacts safety. Unrefined vs. Refined Peanut Oil First, it’s important to know that there are different types of peanut oil.
Gourmet peanut oil, also called unrefined, does contain the protein that may cause allergic reactions and therefore should not be used in cooking for someone with a peanut allergy. However, refined peanut oil has been processed in such a way as to remove the proteins that cause reactions. In fact, the FDA specifically exempts refined oils (including peanut) from the Food Allergy Labeling and Consumer Protection Act – which means highly refined peanut oil does not have to be labeled as an allergen.

Updated: Oct 28, 2021 Peanut allergy in the US affects up to 8% of children and that number continues to increase. One of the biggest burdens for a family of a child with a food allergy is eating outside of the home. Some families avoid eating out altogether due to fear of their child having a reaction.
Many patients with peanut allergy don’t end up in my office until late childhood and their parents never knew that it was safe for their child to eat at Chick-fil-A. Once they find out, their question is always, ” WHY DIDN’T ANYONE TELL ME THAT?” So, I’m here to inform you that the peanut oil used at Chick-fil-A is 100% refined which removes the peanut protein.
The allergen is in the peanut protein, not the oil. That means that people with peanut allergies can safely eat at Chick-fil-A without worrying about reactions. Nothing on their menu contains peanut protein. Something else to be aware of is that not all restaurants use 100% refined peanut oil, so it is important not to assume that another establishment uses the same kind of peanut oil.

For customers concerned about peanut allergies, it may be helpful to know that our peanut oil is refined, bleached and deodorized, which means the proteins in the oil are stripped out during the processing. According to the FDA, highly refined oils, such as highly refined soybean and peanut oil, are not considered major food allergens.

The company is also working on removing trans fats from items such as biscuits, which are not fried. KFC restaurants in many other countries, including China, already use a more healthful oil. “And if they don’t already use (the zero trans-fat cooking oil), they’re working on it now,” said company spokeswoman Laurie Schalow.

KFC said that after a two-year trial of various cooking oils, it settled on low linolenic soybean oil, a zero trans-fat cooking oil, to replace partially hydrogenated soybean oil in its U.S. restaurants. Since the new oil is also made from soybeans, it “preserves the taste profile,” according to KFC President Gregg Dedrick.
The Canadian restaurants will switch to a Canadian-made canola oil, with the change complete by early next year. KFC has already quietly begun using the healthier oil in several hundred restaurants in New York City, Chicago, Atlanta and its hometown, Louisville, Kentucky. Dedrick said consumers have not been able to tell the difference.
He declined to say whether sales had been affected at the converted stores. KFC is working with several suppliers, including Monsanto Co., a leader in genetically altering crops. Monsanto representative Christopher Horner said in an interview that more than 90 percent of the soybeans in the United States are genetically modified, but this particular low-linolenic trait was developed through conventional breeding.

But, at least in the near term, any increase in customer traffic at KFC is likely to be offset by the cost of making the change, he said.
